My preziosi... A story of love and passion

I Preziosi (in Sardinian: Sos Preziosos, as my grandmother called them) are sweets characterised by the use of a fruit called pompia. Pompia is not a lemon, not a grapefruit, and not a citron either — it is a citrus fruit found only in Sardinia, specifically in the municipalities of Siniscola, Posada, Torpè and Orosei. A true rarity, recognised by the scientific community since 2015 and named 'Citrus Monstruosa', a kind of monstrous lemon. In Siniscola tradition, it is used as a natural remedy but above all to prepare delicious sweets.

Inspired by my grandmother, after a long series of attempts, in 2004 I finally succeeded in recreating her pompia filling. Later came a new, exquisite filling made not only from various citrus fruits but also from small aromatic fruits of the Myrtaceae family, more commonly known as myrtle.

...in my preziosi no moulds of any kind are used — that is why they deserve the name I gave them... The decoration of the preziosi is carried out predominantly by hand; some of the tools used include tweezers, scissors, a Sardinian knife, a small bread stamp and various brass rollers. Decorating one prezioso takes about 15 minutes.
